The cooking coals dimmed.
We settled back on the brick patio, watching the day's last rays disappear behind the ancient canyon walls surrounding us, their jagged ivory-and-rust silhouettes soon melting into black nothingness lit by a thousand stars. A chorus of yowling coyotes rose, then stopped, then began again.
      After trolling my flashlight beam through the sagebrush in search of lurking wildlife, I slipped through the sliding glass door into our very special retreat: a privately owned house within the borders of Zion National Park. Zion is one of Utah's most visited parks, yet we had an entire valley all to ourselves at Dan Parkinson's Los Gatos Ranch. A half hour from the nearest conveniences, the home sits alone amid rustling rye fields at the base of a hulking 6,430-foot Tabernacle Dome.
